Chef Boris Cuzon, a native of Brittany, has taken V9 to new heights since his arrival from the United States. The keynote here is imagination. The tasting tree concept offering diners six small dishes has been expanded and now includes V9, French, Thai, Chef and Dessert trees. A small tree is suitable for one to two persons and a large tree, three to four. Worthy of special mention among the soups is lobster bisque which is served cappuccino style in a coffee glass. Wild mushrooms wrapped in filo, a mix of six mushrooms sauteed in butter and garlic and wrapped in filo pastry, with champagne sauce, is outstanding. Char-grilled Australian rack of lamb with truffled shallots, sauteed vegetable ragout, mustard spatzle tomato and thyme jus sauce served with green salad should not be missed. Although the dessert list is extensive, the dessert tree cannot be surpassed, incorporating such nuggets as ginger and chocolate tart, mango frozen souffle and vanilla bean panna cotta to mention but a few. Seven French cheeses and one Swiss (Tilsiter) are available, all married with a recommended wine.
