Trader Vic's features dishes from several cultures under the Pacific Rim heading, which results in an eclectic mix. While you sip a world-famous tropical cocktail, start with cosmo tidbits, a sampling of crispy prawns, excellent slowcooked spare ribs, crab Rangoon wontons and char siu pork. Vegetarians will enjoy cosmo salad with its mix of brie and wild mushroom crostini, artichokes and asparagus. For a rich treat, try crispy duck with mu shu pancakes and hoisin sauce, or slow-cooked candied salmon. Carnivores will approve the selection of US and Australian black angus steaks, but some may prefer them grilled without barbecue sauce. Crispy red-lacquered duck breast is exotically succulent and flavourful. Desserts tilt to the tropical, such as decadent warm chocolate fondant cooked in a coconut shell or oven-roasted peppered pineapple. The meal ends dramatically with a complimentary selection of sweets suspended over a dry-ice fog bowl.
