All raw materials are sourced so one can indulge with a clean conscience. The restaurant works with fishermen to market shark meat, liver, bones, skin and teeth for food, medicine and fashion, while the bird's nest comes from a farm in Southern Thailand. All seasonings are produced in-house, guaranteeing no use of MSG. Braised superior shark's fin in brown sauce reveals finely textured sets of fins, chewy shiitake and thick flakes of crabmeat in a thick brown soup. Dried baked abalone with gelatinous goose web is scented by caramelised garlic cloves, coriander root and seeds and fresh bacon. Generous chunks of abalone are tasty with a pleasing soft chewiness. For dessert, bird's nest is recommended with a combination of separate orders.


An airy, ceiling-to-floor glass-panelled restaurant, it features Chinese rosewood furniture set amid silver bamboo screens.
