FOOD
Chef Bramadras Sharma magically recreates northern India's evocative flavours. Start off with sweet mango lassi or thandai aperitif of pistachio and cashew nuts in milk while savouring crab samosa and jheenga laziz, fried prawns in peppers, mint, onions and chaat masala. Kashmiri rogan josh is incredible, with tender mutton chunks in kashmiri spices and flavoured with saffron and yoghurt, as is raan e khyber, a NW Frontier melt-in-mouth leg of lamb marinated overnight then cooked slowly. All wonderful with naan. Among a big range of tandoor dishes, murgh tikka lababdar is a musttry, soft pieces of chicken in a butter and cream sauce with green spices. Vegetarians have a variety of choices too including aloo gobhi matar with cauliflower, potatoes, peas and tomatoes, and reshmi paneer, a dish of cottage cheese marinated with herbs, cooked tandoor-style. For dessert, try milk with pistachios, or Indian ice cream kulfi faluda.
