Fresh seafood expertly prepared with a twist of fusion sums up Pier 59. There are several meat dishes, but executive chef Degan Septoadji puts fruit of the sea centre stage with an assured hand. Start boldly with caviar, or perhaps succulent panseared tiger prawns with vegetable salsa. Other starters include Maine lobster salad, tuna tartare or soup of sweet shrimp with smoked herring roe. For mains, seared black cod in red capsicum ragout couldn't be prepared more perfectly; the same is true of pan-seared Scottish salmon with shimeji mushroom and lemon thyme. Other noteworthy offerings include broiled lobster with black truffle and oven-baked Atlantic sole. Basil risotto is a delightful accompaniment, or a main for vegetarians. Counterpointing the lightness of seafood is warm bittersweet chocolate cake with kirsch-soaked morello cherries, one of several intriguing desserts.

Setting

On the 59th floor of the Banyan Tree, blue bubbling columns create a romantic undersea grotto, with magnificent views of the skyline.
