Start with snails with garlic and parsley butter. The snails are big and juicy; be sure to have bread on hand to scrape up all the fragrant sauce. Pan-fried duck liver comes in a generous portion that goes nicely with succulent roasted peach. Cleanse the palate with refreshing basil and chilli sherbet before devouring duck leg confit with cranberry sauce. The meat is beautifully done, crispy on the outside and tender within. The sweet sauce divinely complements the duck's hint of fat. French Pyrenees roasted rack of lamb dissolves on the tongue, truffle-scented mash potato completing this faultless dish. Finish up the meal with apple tarte tatin. It takes 20 minutes to prepare but is definitely worth the wait. The dish comes hot from the oven with the pastry crisp, apple ripe and vanilla ice cream weightless. 20/
