New chef Christian Martena, from
Apulia, has the talent to match the enthusiasm he
exudes when offering the evening's specialities like
carciofi al tartufo, Italian artichokes filled with quail
egg yolk topped with slices of Norcia black truffle. Veal
osso buco is slow cooked to perfection. Filetto alla
rossini is an over-the-top indulgence of charcoal grilled
Australian 150-day grain-fed beef tenderloin topped
with goose liver and Italian black truffles. Branzino al
sauvignon blanc is nicely grilled sea bass seasoned
with mixed herbs and served with a sauvignon blanc
reduction. For simpler fare, margherita pizza hits the
spot with its rustic crust. For dessert, warm chocolate
lava cake with vanilla ice cream or zabaione all'amaretto
cap a marvellous meal.
