Start with pomelo and grilled prawns
on betel leaves, a variation on miang kam to give the
tastebuds a workout. Lemongrass salad with prawns,
squid and pork has a sweet, southern feel to it. Stir-fried
squid with sugar snap peas looks and tastes amazing,
the ink painting the bright green pods and succulent
squid. Blue swimmer crab curry has a lovely yellow
hue with a distinct curry flavour. Massaman curry uses
Royal Project chicken in a hearty sauce that presents
the dish's distinct flavours and textures. Stir-fried bean
sprouts with garlic chives, pork and prawn is a simple
dish, but preparation and ingredients create a sum
greater than its parts. For dessert, durian and sticky rice
has a strong cheese flavour that even those wary of the
infamous fruit will find alluring. Mandarin slices with sour
taling pling is an exotic, sweet treat.
