Most of the items on the menu are available in three portion sizes to fit the number of diners or the size of your appetite. Among the recommended dishes are gourmet honey-glazed chicken topped with nuts, peking duck-served traditionally with pancakes, spring onions and hoisin sauce-and a variety of delicious dim sum. Braised fish maw with goose legs and sea cucumber will appeal to the less squeamish diner. For dessert, try sesame and gingko dumplings in hot ginger broth.

SETTINGS:

From the second floor of the Novotel at Siam Square, a small bridge at the door leads the diner to spacious table arrangements, inviting staff, and subtle background music, all combining to recreate a China that probably never was. Staff is attentive and quite knowledgeable about wine pairings.
