FOOD
Three-star Michelin consulting chef Guy Martin's touch in the creation of the menu is excellently matched by the attention in preparation of the chefs on the ground. Golden sauteed frog legs with a mild garlic eggplant confit and vegetables and sage is delicately tender. Pan-fried duck liver with pink peppercorn, Muscat grape and dry fruit compote is a visual as well as tasty treat. Roasted Mediterranean wild sea bass, steamed fillet of Dover sole, grilled turbot or seared Brittany lobster make up the fish choices with delightfully complementary sauces, herbs and vegetables. Of the meat dishes, fillet of lamb with a vanilla crust and a sweetbread ragout or pan-fried heart of fillet beef with truffle potato puree needs to be slowly devoured to enjoy.
