Many diners think Vietnamese food consists only of pho (noodle soup) and spring rolls, but the helpful staff at Le Dalat can suggest new ways to explore the hot, clean notes of this glorious cuisine. As an alternative to pho, consider soups such as can chua (similar to tom yum, but with pineapple) or bun rieu, influenced by the bouillabaisse of Vietnam's former colonists. Salads such as goi cop (Vietnamese olives) and goi bap chuoi (marinated banana buds) are spicy enough to perk up the palate. Cha gio (a dosa-like pancake with beansprouts, pork and prawns) is less forceful but just as delicious. Tom rang me, a huge langoustine with tamarind sauce, combines sweet and sour tastes. This well-loved Vietnamese eatery recently moved location, but has brought with it much of its elegantly eccentric decor (including the best toilets in Bangkok), the same efficient, knowledgeable service and-most importantly-the splendid food.
