Grilled eggplant, zucchini, bellpeppers and asparagus tips, enhanced with light balsamic vinegar, is a good way to begin. Arugula salad with blackened tuna, pine nuts and balsamic dressing lays slices of thick, encrusted fish in a tasty salad full of nuts and other surprises. Lemongrass-encrusted rack of lamb with shallot and garlic red wine gravy, and fingerling potatoes, presents three very good, mild chops next to a large hill of broccoli and some oven-browned potatoes. Steamed salmon and white snapper net on spinach mousse and tomato beurre blanc produces a soft, delicious and healthy meal. Creme brulee's stirred custard, sprinkled with caramelised brown sugar, will satisfy a craving for dessert.
