Ahi tuna tartare is prepared with thin slices of best quality tuna, pomelo, ginger, salmon roe and wasabi aioli. The bite-size perfectly seared US sea scallop is tender and delectable; the saffron-white wine-butter sauce, caviar and roasted tomato bring out the rich flavour of the scallops. Grilled to perfection, the magnificent wagyu of lamb chops also boast the perfect degree of thickness, producing tender, finely textured meat. Dipping a small piece of lamb into the gravy adds richer flavours to the already-delicious dish. For those who prefer steaks, 500-day grain-fed Australian striploin with creamed spinach and bordelaise sauce is simply perfect, demonstrating a very refined method of grilling. The desserts, warm berry compote and Harvey's chocolate fondant, complete a premier dining experience.
