Many of the dishes at Belguardo seem at first glance to be familiar to fans of Italian cuisine, but turn out to marry ingredients in fresh ways. Salad of seared tuna is a great way to start, the pine nuts, greens and fennel giving a soft, sweet, nutty flavour to the lightly salted fish. Seafood soup lingers on the palate, Alaska scallops, shrimp, US clams and fish chunks accenting the saffron-tomato-garlic broth. Fettuccine with rock lobster sees homemade pasta simmered in a divine, sweet garlic-pepper sauce. Australian roasted sea bass, a thick, skin-up fillet atop lettuce and mushrooms scented with lemon sauce and speckled with truffle, is outstanding, fresh and crisp. Don't leave without sampling hot Madagascar chocolate tortino with chamomile sherbet, or Italian cheese platter.

Setting

Diners sit comfortably at simple tables along glass walls, overlooking Siam Paragon's ground floor. A small room upstairs holds 15 for private affairs.
