The short menu changes regularly,
offering a mix of old favourites and fresh experiments.
While previous experiments in molecular gastronomy
appear to have ceased, the dishes remain surprising, well
executed and mostly successful. A starter of shiitake
broth gets a luxurious kick from foie gras foam; crab and
pomelo salad is light and refreshing. From the mains,
lamb rack with olives and pine nuts is punchy and tasty,
as is a vegetarian option of banana peppers stuffed
with cheese and served with a tangy tomato sauce.
Snowfish with vanilla is a more restrained choice. The
inspiration continues to the dessert course. Fig puree
adds a welcome sourness to pistachio cookies, while
gorgonzola tart with basil sorbet will almost certainly
divide opinion.
Where else can you lounge on Roman-style beds, take in movie clips, a DJ set and conceptual performance art while you eat, then shake off the calories at the adjacent nightclub? It would be worth entering this glorious, cylindrical edifice even if the food were sub-standard (which it isn't).
