Rottoli delivers superbly on his promise of authentic
Italian cuisine. Start with Japanese king crab salad, piled
high with vibrant, crisp greens; olive oil and lemon allow
the full flavour of the crabmeat to shine through, fresh
from the grill. Alternatively, opt for duck liver terrine,
served slightly warm and presented with artful streaks
of coarse sea salt, pepper and chutney, giving diners a
depth of taste with just enough intensity to tease the
tongue. Follow with perfectly seared, tender and meaty
Japanese scallops, paired with tiger prawns and cooked
on a skewer. Roasted cherry tomatoes lend a lovely
acidic contrast and pop of flavour to the dish, while a
vegetable relish sauce highlights the earthiness of a bed
of creamy, whipped potatoes.
