This local outlet of a famous Hong Kong restaurant specialises in abalone and has a very popular dim sum menu. Begin with tart pickled vegetables in sesame oil, shrimp and soya bean paste with Hong Kong kale. The slightly bitter vegetable is delicious against the light garlic sauce, a lovely complement to tender, crispy roast duck in a red sauce or sweet roast suckling pig, its scrumptious crackling skin resting on moist, slightly fatty cubes of pork. Queen clam America on rice noodles boasts excellent, slightly chewy meat flavoured with chives and garlic. Mexican abalone, a rich dish lightly stewed in a red sauce, comes with surprisingly tasty, slightly glutinous sea cucumber and fat mushrooms. Steamed red garoupa, a delicious, firm, whole fish, is served in soya, chilli and coriander sauce. Close with fresh almond soup with gingko, a Chinese dessert favourite.
