Hong Kong Chef Mo Kam Kwong at the Shangri-La Hotel's Shang Palace Chinese restaurant believes the key to his sought-after mooncakes is its quality ingredients and the fact that they are freshly made. Flavours include mixed fruits and nut paste, durian, lotus seed with pandanus, red bean and cream paste. Man Ho Chinese Restaurant at the JW Marriott in Sukhumvit Road will be selling their famous mooncakes from September 1 until October 20. The variety available include lotus seed, durian and black bean. Order or buy directly at Man Ho or from the Bangkok Baking Company. Chinese Master Chef Wong Kam-Yau of the Conrad Hotel prepares his delicate mooncakes using the highest quality ingredients. Available from September 1 until October 7, they come in two different ranges: Original and East meets West. Order from Liu, the Chinese Restaurant at the hotel, or at Deli by Conrad on the 2nd floor of the All Seasons Retail Center. From September 22 until October 6 they can also be purchased at Siam Paragon (1st floor) or at The Emporium (5th floor). At Mei Jiang, Chef Kwok Fung Tam of The Peninsula Hotel Bangkok and his team produce approximately 80,000 mooncakes every year by hand, which comes down to 4,000 pieces a day and about 20 tons of ingredients. To achieve a soft pastry casing filled with the soft and rich texture of a sweet custard and duck egg cream, the mooncake-making process requires exact precision and dedication. This secret recipe has been passed down as inheritance to the hotel.
