Infiniti Restaurant is the flagship dining outlet at Sheraton Pattaya Resort, offering ocean views and sumptuous cuisine. This open air restaurant really makes the most of its dramatic location, with the ocean directly below and Coral Island (Koh Larn) visible in the distance. The varied menu caters to different guests at different times of day with the assurance of exceptional quality and service that is the hallmark of this prestigious hotel chain.

There is an all day dining concept at Infiniti Restaurant in Pattaya, and during the day guests can enjoy stone-baked, wood fired pizzas and authentic Italian pastas, but it is the dinner menu that most impresses, with some wonderful international dishes and fusion items to enjoy.  

Adding a sense of fun to proceedings, we love the hot stone appetisers, featuring a range of meats that are delivered to your table half cooked with a hot stone to finish off the job. The pork belly is served as six thick cuts of pork, which sizzles instantly as it hits the stone. Cook the meat for at least 45 seconds on each side to add a real crispy layer to the meat (340 baht). 

The sashimi grade tuna tartar is an excellent example of the fusion dishes on the menu: diced tuna is tossed with a soy vinaigrette, sprinkled with white sesame seeds and served on a crispy, flat wonton. It is a dish that mixes obvious elements of Japanese cuisine with the fun of western canapés and is a great option to share. Three bigger-than-bite-size wontons are served for 430 baht.

Mains are sourced from all over the world with Norwegian salmon (750 baht) and Australian lamb chops (1100 baht) highly recommended on our part. The lamb is served as three large premium cuts of meat on the bone, complemented by a sweet potato puree, with caramelised onions, asparagus and diced roast potatoes, whilst the rich gravy enhances the whole dish.

The salmon fillet is glazed with a raisin and caper butter accompanied by a slightly sweet cauliflower puree and firm-to-the-bite asparagus. The skin is charred with a delightfully soft pink flesh beneath. Paired with a crisp sauvignon blanc, the salmon is a lighter option despite the large portion.

There is also a special three course set menu at Infiniti Restaurant, offering two choices of appetizer, main and dessert, with stand out options including Parma ham, brie and pear salad, grilled lamb chop and salted caramel budlino all for the excellent price of 950 baht (not including tax or service charge).

For desserts at Infiniti we can’t look past the mandarin orange panna cotta for 320 baht, with sweet orange layered on top of the soft panna cotta, and an assortment of fresh fruit and a passion fruit sorbet with chocolate crumbs. Fresh, fruity and soft, it’s the perfect light finish to a meal. But for something heavier, the peanut butter chocolate tart with vanilla ice cream and chocolate shard will surely hit the spot (320 baht).

If you come around sunset to enjoy the beautiful scenery, be sure to try one of the restaurant’s signature cocktails. Each with a tropical taste, we especially love the Sawasdee cocktail containing rum, crème de banana, and an underlying taste of bael fruit. It’s not too sweet and totally unique.
