Yellow Tail Sushi Bar (YTSB) at VIE Hotel Bangkok

Impressive Japanese Restaurant in Bangkok

As the name suggests, Yellow Tail Sushi Bar is an exceptional Japanese restaurant for anyone looking for premium cuts of the best sushi and sashimi, flown fresh from Japan three times a week. There are so many Japanese restaurants in Bangkok serving tuna belly and wagyu steak nowadays that some people have mistakenly started to lump them all in together – but mark my words, the quality of the produce here is far higher than any of those shopping mall franchise bento box restaurants. Open every day for dinner between 18:00 and 22:00, and 11:30 to 14:30 on weekends, this is an excellent option for a special occasion when only the best is good enough.

Set on the third floor of a building connected to VIE Hotel by a decked walkway, the softly lit wooden interior evokes an unmistakably Japanese vibe – think sake barrels, bamboo and rough cut, rustic tables – but the most interesting fixture is the wavy ceiling that flows over dining room. You can choose to sit on central dining tables, in one of three booths or up at the bar to watch the diligent chefs cutting and carving. Towards the back of the restaurant is a private zone with optional linen drapes for that exclusive touch, but we much preferred sitting in one of the comfortable booths that have direct views of the sushi chefs in action. Electronic Ipad menus are handed out along with your choice of bespoke chopsticks from a cutlery box.

The interior design of modern and classic styles carries over into the food. Signature sushi rolls are where the chef has best expressed himself with the salmon sushi rolls coming particularly recommended. The salmon is lightly seared and laid around the majority of the roll. Inside its many layers of wrapped seaweed are slices of avocado, pickled carrot, cucumber and fried crispy salmon skin. The result is an ever changing taste that is something close to art. These are among the finest sushi rolls we have tried anywhere, Japan included, but they are quite a mouthful so have a napkin at the ready.

Most diners who come to Yellow Tail Sushi Bar (YTSB) are looking for premium and hard to find cuts of fish, and if you are in this category then we recommend the chef’s sashimi platter. It comes in three classes: standard, semi fatty or fatty. All three classes still deliver the same thick cuts from the same fish; the difference being the added taste and texture of the fattiest cuts so adored by real sashimi connoisseurs. The fish are served in a ceramic pot on a bed of ice, consisting of the famed, fatty, marbled tuna belly (otoro), the eponymous yellow tail, soft scallops, cleanly cut and deshelled Alaskan king crab, shrimp, blood red tuna and striped jack (shima aji).

The otoro has strands of fat holding the heavy flesh together and with a little wasabi and soy sauce is a truly defining sashimi experience. The striped jack is cut with a faint blood line to prove its freshness and really delivers a fresh, subtle taste and soft texture, while the red tuna flesh is as meaty as fish can get. In contrast, the shrimp and scallops are almost creamy in comparison and add a pleasant variety to the dish. The mixed tempura was the only let down of the night. The shrimp and mixed vegetables were fresh and tasty but the tempura batter was too oily for our tastes, and for this price you are allowed to be ultra critical.

Yes, the price of lunch or dinner at YTSB is expensive, but for the quality of the ingredients and the overall experience it is worth it. This is a top end sushi joint that is guaranteed to impress.
