Signature is the flagship restaurant at Kudeta Bangkok. Labelled as ‘Japanese-influenced modern cuisine’ this is a fine-dining experience to impress the most particular of connoisseurs. The menu is split into cold, tempura and hot, served in a Japanese style and intended to be shared. Portions are small but exquisite in preparation and plating. The menu here is heavy on ocean delicacies and we loved the oyster trio (400 baht), fine de Claire oysters served shucked and ready to devour, with three toppings of sweet, sour and a little Thai-inspired spice. The cut of hon maguro tataki – blue fin tuna with shallots, seaweed and a Tosazu vinegar reduction – is a real treat (600 baht). The fish is cut extra fatty and is fresher than anywhere else in Bangkok, judging from the texture and unmistakeable ‘meaty’ taste. Fish is imported three times a week at Ku De Ta and then held in a special -80 degrees freezer (the only one in Southeast Asia) so the flavour and freshness is sublime.

It’s not all about sashimi though, with an excellent range of tempura that is served light and almost without oil, allowing the flavours within to linger on the palate. The limited meat selection confirms that quality is more important than quantity, proven by the 3,000 baht Wagyu Hibatchi A5 grade from Ohmi Prefecture (denoting marbling and size). It is cut quite thin and served with a little bit of ceremony, with three kinds of salt and assorted sauces. This meat is unbelievable in terms of taste and tenderness, turning to butter in your mouth.
Desserts are also a big deal here. Go for the Thai S’Mores (360 baht), carrying the taste of classic Thai milk tea ice cream, with praline and marshmallow for a gooey, rich and satisfying end to your meal. The wine list is disconcertingly long with all regions well represented, but thankfully the restaurant manager is never far away to help you out and the house wine is both outstanding and excellent value.
